DRAFT — she grew up in Shan State, in eastern Myanmar, and cooks for a living. Sushi is precise work: the same cut, the same weight of rice, the same shape, hundreds of times a night, and it either looks right or it does not.

DRAFT — nails are the newer trade and the same instinct. Small surfaces, steady hands, and somebody sitting across from you for an hour. She is taking on clients while she keeps working the kitchen.
